THE SCOOPER BOWL TRIO
Serves 4-6
Did you know that during Super Bowl the average American consumes 2,400 calories under 5 hours?! Say whaaat? That’s well above daily calorie recommendations! There’s nothing that can spoil your victory dance quite like a bathroom attack from the typical good ol’ Super Bowl grub.
But you’re in luck – at NeoLife we pride ourselves on being Super Bowl snack game strong (AKA we know how to snack healthy!). For your guilt-free enjoyment, we’ve artfully crafted this delicious Seven Layer Dip, paired with baked super food chips and cabbage cups for the ultimate game-day grub!
SEVEN LAYER DIP
Ingredients (all organic of course):
Layer 1 – Beans
3 cups faux refried beans (black beans mashed)
Layer 2 – Sour Cream Substitute
6 oz. plain greek yogurt
Layer 3 – Cheese
1 cup mozzarella cheese, shredded
Layer 4 – More Beans
3 cups faux refried beans (black beans mashed)
Layer 5 – Guacamole
2 avocados, mashed
1/3 cup red onion, diced
2 vine ripened tomatoes, diced
1/2 jalapeño, seeded & diced
2 tbsp. cilantro, chopped
1 tsp. garlic, diced
1/2 lime, squeezed
Layer 6 – Pico de Gallo
1/3 cup red onion, diced
2 vine ripened tomatoes, diced
1/2 jalapeño, seeded & diced
2 tbsp. cilantro, chopped
Layer 7 – Garnish
1/2 lime, to squeeze
piece of cilantro
Directions:
1. Start by preparing layer 4 – the guacamole. Cut avocados into halves (with pits in to keep from turning brown) and mash in a large bowl. Cut and mix in rest of guac ingredients – lime juice, garlic, jalapeño, cilantro, red onion and tomatoes. Add sea salt to taste (optional).
2. Next prepare layer 5 – pico de gallo in a separate bowl by cutting and then combining your ingredients – onion, tomato, jalapeño, cilantro and lime. Add sea salt to taste (optional).
3. Prepare your faux refried beans. Pour black beans into a zip bag. Seal tight and mash.
Now you’re ready to get to Layering!
Carefully distribute and smooth each layer into your serving bowl of choice.
1. Mashed Black Beans (as substitute for refried)
2. Greek Yogurt (as substitute for sour cream)
3. Mozzarella
4. More Beans
5. Guacamole
6. Pico de Gallo
7. Garnish by squeezing a fresh lime on top and adding a piece of cilantro
BAKED SUPER FOOD CHIPS
Ingredients (all organic of course):
2 turnips, thinly sliced
3 sweet potatoes, thinly sliced
3 beets, thinly sliced
olive oil
Directions:
1. Preheat your oven to 350 degrees.
2. Toss thinly sliced veggies in bowl with olive oil. Then place the veggie slices on a baking pan so they don’t touch or overlap.
3. Bake for 5 minutes, then flip and do another 5 minutes or until they begin to brown. You really have to watch the chips to catch them at the right time.
4. Transfer chips to paper towel, blot olive oil, and allow to crisp. If they don’t crisp, they need another minute or two in the oven. These should be crispy for dipping, not soft or soggy!
5. Reload your baking pan and repeat until your chips are all nice and crisp.
CABBAGE CUPS
Ingredients (all organic of course):
1 head of purple cabbage
Directions:
Cut off stem of cabbage and gently pull apart, creating the ideal cup for piling on your mouthwatering Seven Layer Dip.
